Amaranth (Chaulai in Pahadi) is a superfood grain that dates back 6000 years and is known as the “Food of Immortality” among Aztecs. One of the best sources of plant-based protein, it contains all 9 essential amino acids along with high fiber, iron, selenium, and Vitamin B content. Derived from the tiny seeds of the amaranth plant, it is inherently gluten-free and is also an excellent source of micronutrients like magnesium and phosphorus.

 

Our Amaranth Flour is made from crops grown locally in the high altitude Himalayan farms by small-scale farmers. We do not bleach the flour and slow ground them in dedicated watermills (Gharats), which minimizes heating and burning of rich antioxidants, thus retaining maximum nutrition. With its earthy aroma and subtly nutty flavor, Himalayan amaranth flour adds depth and complexity to a wide array of dishes. It is a staple in the diets of those seeking gluten-free alternatives, as it is naturally devoid of gluten, making it suitable for individuals with dietary restrictions or sensitivities. In Himalayan cuisine, first the Amaranth leaves are used as Chaulai kaa saag during winters. Then the seeds of the same plants are dried and ground to make Chaulai flour, which is utilized in various traditional recipes, ranging from flatbreads and pancakes to porridges and sweets.
